Unlike the princesses of heart, who stand around looking pretty until rescued (except kiari and belle, who actually do something to help), the princes of dark work as angels of death. Sora helps them in order to earn the right of returning to life, and to fix the damage cause by Razakels corruption. Both have a reaper form and a human form. Here's a basic run down.
Azrael - The head angel of death. He acts more like a farmer who cares for his harvest, and will not stand for anything that threatens life on a whole. He also works out which deaths require the appearance of a prince of dark using a system called 'The Nodes'.

Michael - A kind and loving angel of death, who is sympathetic of the dying and and talks in a somewhat biblical fashion.
"Fear not, for thou art going to a better place."
Samael - A sarcastic and sadistic angel of death, who takes pleasure in his work, and acts rather a lot like Grim.
"My name is Grimmy and I've come to reap your immortal soul!"
Mort - A human who was hired as Death's apprentice. But when the apprentice became the master, he fought against Death for his humanity. He defeated Death, but refused to kill him, as that would result in Mort becoming the Reaper. His hesitation led to Death's victory, and Mort was allowed to return to mortality, but retained his abilities as a Reaper.
"History has a few tricks up its sleeve. It's been around for a long time."
Thanatos - A reaper who was trapped inside Minatos, and then lived as another young boy named Ryoji. His friendship and short life taught him about empathy and humanity, and cares deeply about the people he reaps.
"I happen to know an excellent restaurant on Shirakiwa boulevard..."
Odin - Final Fantasy Odin. He specialises in battles. He often does the work of valkyries, carrying the souls of heroes to the next existence.
"Only once have I known defeat, and that was when lightning struck my blade"
Joseph - A rookie reaper who often takes the form of a handsome young man to experience mortal life. He often hires a mortal guide in exchange for extended life. Despite his lack of seniority, he is the only one with any influence, apart from Azrael, over the length of life anyone has.
"Easy Dave, I don't want you to have a heart attack. That would ruin my vacation."
